Hoofprint Cheese Company Comes to the Farmers Market

Brendan Foley and his fiancée Katelyn Massarone and their Hoofprint Cheese Company are the latest and most welcome addition to the Millbrook Farmers Market. 

Brendan and Katelyn grew up here in Millbrook where both their families had goats. For a few years after college the couple lived and worked in New York City.  Then about a year ago they decided they had had enough of city living and it was time to get back to the Hudson Valley. 

Katelyn says, “We love goats and making cheese.” Brendan adds ,“We started thinking about it a year ago and we made it happen and became fully operational two months ago. Its something we’re proud of and we’re one of the very few goat dairies in New York.”

At the moment they are milking 15 goats but hope to increase that number to 20 next year.  Meanwhile both Brendan and Katelyn are working fulltime jobs – Brendan as a consultant to a pension and health benefit company which takes him into the city three or four days a week an Katelyn at Sprout Creek Farm where she helps with their goats.

Among their offerings at the Farmers Market are their plain Chevre Log as well as a choice of the cheese with herbs, Cranberries and walnuts, or Pistachios and chives.  They also sell Feta, both Fresh and marinated.  Moreover, they are licensed to sell raw milk.  Regulations stipulate it can only be sold s directly from the farm a few miles south of Millbrook on Route 82.

Hoofprint Cheeses are also available at Marona’s, Elvins, McEnroe, Quattros, and Hathaway Young in Millerton 

Brendan and Katelyn try to “provide a happy and luxurious life” for their goats because they know that makes for wonderful cheese. Yoghurt is in the future, but for now they are still adjusting to how fast this has all happened.
